I would like to take up kick boxing to get in better shape but without competing for money or any thing. I don’t mind competing against others for practice but I have no intention of going pro or entering any contest, would that be fine or are most kick boxing classes for those who want a career in mixed martial arts?
I have some experience in Kung Fu but I had an injury that kept me out of shape for some months.

Its perfectly fine for you to take martial arts without wanting to become a professional fighter, most of us do, even most of the instructors that teach the martial arts won’t have had a professional fight. There’s different kinds of kickboxing, and most kinds are made for people exactly like you. If you just want to do it for exercise you might want to check our Cardio Kickboxing classes. Billy Blanks made this sort of thing famous when he invented Tae Bo. Just look up Kickboxing in your local yellow pages, and then look for the ads that mention "cardio" and you’re sure to find something like that in your city.
On the other hand, if what you really want to do is strap on a padded helmet, chest protector and other safety gear, and then have sparring matches where you learn to fight like Jean Claude Van Damme your best bet is to join a Taekwondo class. Taekwondo is really Korean Karate, but it became hugely popular by emphasizing contact-sparring with padded safety gear. It’s a lot of fun, and injuries are rare so even kids can do it.
So yes, you can learn kickboxing as a hobby. In fact, most people who do kickboxing do it as a hobby. Remember, these places are in business because people like you pay money to join them. They’re not going to say "You can’t train here, you’re not serious enough! We only want people who are going to be on pay-per-views in the UFC!" Most martial arts classes are quite welcoming, so join one and have fun!

Of course you can; just look for a gym and coach that takes such people and who has classes. I work with a number of people who are not interested in actually getting into the ring and that is fine with me. It helps pay the rent, helps also to provide a multitude of people for others to train and spare with up to a certain level while also meeting their needs like what you mention. Just be careful as some coaches and instructors really try to put a lot of pressure on people sometimes to get into the ring on some promoter’s card. Don’t do it if you don’t want to! Pushing or manipulating people to get into the ring is wrong in my book but not every coach or instructor considers his students first and I have seen bad things happen. The poor student takes the beating and gets stuck with the medical bills in some of those cases so keep this all in mind.
